ChiuHouse Café is run by its two founders in Changhua. Our coffee is roasted in-house at 彰啡.
This is the story of the people at the roaster and the bar, and how the café got its name.
Begin with the roaster.

Roasting is his work. Every cup served at ChiuHouse begins with his roasting at 彰啡.
CafeMonq and 咖啡和尚 are the English and Chinese expressions of the same public identity.
A life in coffee.
By 2026, he had spent nearly twenty years in coffee. He followed the coffee itself: first learning to roast it, then to brew it, then to understand it in the cup. Roasting, extraction and cupping, one layer at a time.
Much of that time was spent in China. He led the coffee division of a chain in Guangzhou, managed a roasting factory, headed a coffee academy and judged at several coffee competitions. Those years took him into classrooms and roasting factories as often as behind the bar.
Later, he returned to Changhua and began again. First came a steady foundation in roasting: 彰啡. Then came a place to sit down and drink those coffees: ChiuHouse Café.
After twenty years of learning, his approach has become simpler. What remains finds its way into the cup.

All qualifications, certificates and judging experience shown here belong to 邱紹恩.
These documents trace his training in roasting, extraction, sensory skills and teaching. His past professional work also includes SCA Certifier and examiner roles.

Xiang-Jing Hong (Jing-Jing)
It began with her mother’s daily cup. Watching coffee bring a little ease and pleasure to a tiring day sparked her curiosity.
She entered the coffee industry at 17, worked at 85度C and 黑沃咖啡, and founded 菁萃咖啡. She continues to provide coffee service for weddings, funerals, celebrations and other events.
Under the guidance of 邱紹恩, known as 咖啡和尚, she earned her SCA international specialty coffee barista qualification.
She brings more than a decade of experience to ChiuHouse Café, which she co-founded with 邱紹恩.
From enjoying coffee to making it every day.

Ren-Zhi Zhou
Ren-Zhi Zhou first became interested in coffee during military service. After leaving the service, that simple interest led him into the coffee world.
Through an introduction by 范聖傑, owner of 東莞藍山, he met his first coffee teacher, 邱紹恩 — 咖啡和尚 — and began learning at 彰啡.
Over a year of study, he built his understanding through basic knowledge, practical work and professional training, earning international coffee-related certificates along the way.
He then worked in other coffee settings, heading the morning coffee department at Somm Juice and working as a full-time roaster at Tommy Boy’s coffee roasting factory.
Now back at 彰啡, he oversees the factory’s main daily operations: roasting coffee, processing tea powder, and making and organizing coffee products. That experience goes into the products sent to customers each day.
Through learning, practice and the daily repetition of doing a job well, he has come to see that ‘there is no final destination in coffee, only an understanding that keeps growing.’
Why ChiuHouse.
Chiu comes from the family name 邱, while keeping the sound and memory of the earlier name, Chill House.
One word changed. It is still the same café.
ChiuHouse Café was formally established in 2026.


Our approach to coffee.
The deeper you go into coffee, the simpler the answer becomes: clean, balanced and a pleasure to finish.
There is no vocabulary test here. The quickest way to know whether a coffee suits you is to taste it. If you want to talk about origins, processing or roasting, just ask.
We care less about the cup that surprises you than the one you want again tomorrow. That asks more of us, and tells us more.
Good coffee reveals itself. Day after day.
We roast our own coffee.
ChiuHouse’s coffee is roasted in-house by 彰啡|炒豆專門店. It is neither outsourced roasting nor a pairing of separate brands.
彰啡 is the roasting work behind the café. The café is where that work meets you.
